Chocolate Peanut Butter Vegan Fudge Recipe

The Student Blog is happy to present our first Faculty contribution to our Student Blog!


Ingredients

- 1/2 cup of coconut oil

- 1/2 cup of cocoa powder

- 1/2 cup of peanut butter (can be substituted for another nut butter or left out to make chocolate fudge)

- 1/2 cup of honey pinch of salt


Directions

Melt coconut oil in a pan over low heat. Once liquid, turn off heat. Using a whisk, mix together the other ingredients into the oil until smooth. Pour into a 8x8 inch baking dish lined with parchment paper and refrigerate for at least 2 hours. Cut into squares and enjoy! Make sure to keep the fudge in the refrigerator, so that the coconut oil stays solid.
