Sweet and Simple Recipes

NUTELLA BROWNIES

(preparation time: 35 mins)

INGREDIENTS

  • 1 1/4 cup (13 oz) Nutella

  • 2 large eggs

  • 1/2 cup all purpose flour


INSTRUCTIONS

1. Preheat the oven to 350°F (177 °C). Lightly coat an 8x8-inch (or 9x9) baking dish with a nonstick cooking spray (or line the baking dish with parchment paper).

2. In a large bowl, combine all ingredients and mix until smooth. Pour mixture onto the baking dish and smooth the top with a spatula.

3. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Make sure you don’t over-bake the brownies, otherwise they will dry out.

4. Let the brownies cool before cutting and serving them.



COOKIE DOUGH

(preparation time: 15 minutes)

INGREDIENTS (1 serving)

  • 1 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 cup unsalted butter softened to room temperature

  • 2 1/2 teaspoons vanilla extract

  • Small sprinkle of salt

  • 2 cups all purpose flour

  • 2 tablespoons milk plus more if needed

  • 1 cup miniature chocolate chips


INSTRUCTIONS

1. In a bowl, cream together the brown sugar, granulated sugar, and butter using a whisk.

2. Beat until fluffy and light in color for about 1 minute.

3. Mix in the vanilla extract and salt until fully combined.

4. Whisk in the flour until combined.

5. Slowly pour in the milk and mix until dough starts to come together. Be careful not to add too much, or too little.

6. Mix in your desired topping (chocolate chips)



BLUEBERRY MUFFINS

(preparation time: 30 mins)

INGREDIENTS (12 servings)

  • 1 cup oats

  • 1 cup milk (whichever type you prefer)

  • 1 cup all purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup brown sugar

  • 1 egg (beaten)

  • ¼ cup vegetable oil

  • ½ zest of lemon (optional but recommended)

  • 1 cup blueberries


INSTRUCTIONS

1.Preheat the oven to 400°F/200°C.

2.Paper line 12 muffin cups on a rack (or use a muffin pan and grease with coconut oil/butter/ghee).

3.Combine oats and buttermilk in a small bowl.

4. In another bowl, combine flour, baking powder, baking soda, salt, and brown sugar. Whisk together. Set aside.

5. Add beaten egg, oil, and lemon zest to oat mixture. Mix well.

6. Add oat mixture all at once to the dry ingredients. Stir until moistened.

7. Gently fold in the blueberries (you could even add some chocolate chips if you’d like).

8. Fill muffin liners (or muffin tins) ¾ full.

9. Bake for 15-22 minutes or until the top bounces back when lightly touched. (I’d recommend checking with a toothpick. If it comes out clean with small crumbly bits, the muffins are ready.)

10. Remove the muffins from the heat, let them cool off for a bit



CHOCOLATE CHIPS

(preparation time: 30 mins)

INGREDIENTS

  • 1 cup softened butter

  • 1 cup white (granulated) sugar

  • 1 cup light brown sugar packed

  • 2 tsp pure vanilla extract

  • 2 large eggs

  • 3 cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • 1 tsp sea salt

  • 2 cups chocolate chips (or chunks, or chopped chocolate)


INSTRUCTIONS

1. Preheat the oven to 375°F. Line a baking pan with parchment paper and set it aside.

2. In a bowl, mix flour, baking soda, salt, baking powder. Set aside.

3. In a separate bowl, cream together butter and sugars until combined.

4. Beat in eggs and vanilla until fluffy.

5. Mix in the dry ingredients until combined.

6. Add a 12 oz package of chocolate chips (or how many you would like) and mix well.

7. Roll 2 to 3 tablespoons of dough at a time into balls and place them evenly spaced on your prepared cookie sheets (you could also use a small cookie scoop to make your cookies).

8. Bake for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown.

9. Let them sit on the baking pan for 2 minutes before removing them from the oven.
